Not produced every year and made from old vines, this cuvée requires maturation in barrels in order to reveal the quintessence of its appellation. Keeping potential from 5 to 10 years.
This cuvée, made from plots of old vines, is produced in great years. Its maturation in oak barrels during one and a half year makes it a more structured wine, meat and spicy dishes. Best with winter and autumn food !
This wine is complex, powerfull but elegant with fine tannins and aromas of black fruits (cherry, morello cherry, blackberry), vanilla oak and graphite leather. Roundness! To be served between 15°C and 17°C.
The oldest vines of the Domaine are between 50 and 100 years old and are located around the small village of Chaintres, all on clay-limestone soils. They have been cultivated according to the rules of organic agriculture since 2017. 100% Cabernet franc – pruning Guyot Val de Loire
The harvest is 100% manual and is sorted by hand in the cellar. The grapes are destemmed and transported into stainless steel tanks. About 20 to 30 days of maceration between 24°C and 28°C to preserve the fruit and let the structure be expressed. This cuvée is made from the best juices of the Vieilles Vignes, and matures for 18 months after the fermentations.
