In the heart of the Saumur Champigny appellation, these 50 to 100 years old vines produce a wine with slow vinification. Length in the mouth and persistence for this aging wine with recognized typicality.
This emblematic cuvée of the appellation is proving to be more versatile than it seems. Fits perfectly with beef, lamb or game dishes and on soft cheese cows very refined. Also with spicy food.
Black fruits, earthy, leather, mushrooms will emerge from this cuvée. Powerful and long finish, this is a wine that can be drunk young. This
wine expresses perfectly after 3 or 4 years in bottle and can be forgotten in the cellar 10 or 15 years.
To be served between 15°C et 18°C.
The most old vines of the Domaine are 50 to 100 years old and are located around the small village of Chaintres, all on clay-limestone soils. They have been worked according to the rules of organic agriculture since 2017. 100% Cabernet franc – Taille Guyot Val de Loire
The harvest is 100% manual and is fully sorted in the cellar. The grapes are destemmed and transported to stainless steel tanks. About 20 to 30 days of maceration between 24 ° c and 28 ° c maximum to preserve the fruit while allowing the structure to be expressed.
From 2021 on, all the vintages are certified organic.
